do you know a good list of jitsi hosters that people can just book accounts or a server for their organisation?

https://github.com/jitsi/jitsi-meet/wiki/Jitsi-Meet-Instances is a list of public instances, but no info about if they are offering payable accounts/servers?
Search engines find a few offers, some companies offer individual services and some couple it with proprietary elements. It would be cool to have a list for ready-bookable offers. :)

Given that more people are looking into remote working, there is a need for good Free Software solutions. Quite a few organisations already start to collect link lists, though it is not easy as just a list is not enough in many cases. (FSFE started something at https://wiki.fsfe.org/Activities/FreeSoftware4RemoteWorking but it needs more work.)

I would appreciate this too.
Our company tried hosting our own Jitsi Meet server a couple of years ago and it actually worked, but we were having many intermittent problems and in the end decided that hosting video solutions is not our specialty.
We sometimes use the free meet.jit.si instance, but we'd be happy to have access to a paid service if it works well. Currently we pay for many-user rooms at whereby.com, but that is not free software AFAIK.

While it is neither plain Jitsi Meet (it might have some proprietary bits mixed in), nor paid, this service is backed by the company employing most if not all of the Jitsi team members so indirectly you would be supporting Jitsi development as well:

Not actually a list, but Netways is offering hosting of Jitsi, Nextcloud and Rocket Chat for 3 months for free now. [1]

I only know of two, the 8x8 already mentioned and https://www.fairkom.eu/fairmeeting that is hosted in Germany and not on Amazon or such.
